Sour Zucchini Soup Recipe
Serving : 6 Servings
Ingredients
- 2 zucchini, grated,
- 1 carrot, grated,
- 2 tbsps. flour,
- 5 cups water, lukewarm,
- 4 tbsp. vegetable oil,
- 2 tbsps. plain yoghurt,
- 1 egg yolk,
- Juice of 1/2 lemon,
- 1 tbsp. dried mint,
- Salt.
Preparation
- Heat oil in a skillet,
- Add grated carrot and zucchini and stir fry until tender,
- Add lukewarm water and mix well and simmer,
- In a different bowl mix yoghurt, egg yolk, flour and lemon juice,
- Take a scoop of soup and add to yoghurt mixture very slowly and mix as well,
- Add the sauce to the soup slowly and mix constantly,
- Simmer for 5 mins, remove from heat,
- Add salt and dried mint, mix well.
