Mexican Bean Wrap Recipe
Serving : 2 Servings
Ingredients
- 1,5 cups canned Mexican beans,
- 1 onion,
- 1 red pepper, chopped,
- 1 chilli pepper, chopped,
- 1 clove of garlic, minced,
- 2 tomatoes, chopped,
- 4 slices of cheddar cheese,
- 4 tablespoons vegetable oil,
- 1 tsp red pepper paste,
- 2 tortillas.
Preparation
- Chop the onion half moon shaped,
- Heat the oil in a large pan, add onions and sautee until tender,
- Add the red pepper, mexican pepper and garlic and cook until tender, stirring constantly,
- Add the pepper paste, stir and cook 2 min. more,
- Add the tomatoes and cook until tender,
- Add the mexican bean and cook stirring for 2-3 minutes, then remove from heat,
- Place half of the mixture longitudinally in the middle of one of the tortillas,
- Put 2 slices of cheddar cheese on top,
- Fold the opposing borders of the tortillas and roll,
- Prepare the other tortilla in the same way,
- Place the wraps in a baking pan and bake in a 180 C degrees preheated oven for 5 mins.,
- Halve the wraps while serving.
