Fried Pepper Salad With Yogurt And Tomato Sauce

Serving : 4 Servings
Ingredients
- 4-5 peppers, chopped,
 - 1/4 cup of vegetable oil,
 - 1 tsp of tomato paste,
 - 2 cups plain yogurt,
 - 1 clove of garlic,
 - 1 tbp of vinegar,
 - 1 tsp of sugar,
 - 1/2 cup of boiling water,
 - Salt to taste.
 
Preparation
- Heat the oil in a pan,
 - Add peppers and cook in high heat constantly stirring until tender,
 - Remove the peppers from the oil into a bowl,
 - Add tomato paste into the oil and cook for 2-3 mins,
 - Add water and stir until the lumps disappear,
 - Add vinegar, sugar and salt if necessary and mix,
 - Simmer until set and then remove from heat,
 - Chop or smash garlic cloves and add into yogurt with some salt, mix well,
 - Add peppers and mix,
 - Lay yogurt salad into a serving plate,
 - Pour tomato sauce on top,
 - Garnish with chopped parsley.
