Fried Pepper Salad With Yogurt And Tomato Sauce

Serving : 4 Servings

Ingredients

  • 4-5 peppers, chopped,
  • 1/4 cup of vegetable oil,
  • 1 tsp of tomato paste,
  • 2 cups plain yogurt,
  • 1 clove of garlic,
  • 1 tbp of vinegar,
  • 1 tsp of sugar,
  • 1/2 cup of boiling water,
  • Salt to taste.

Preparation

  1. Heat the oil in a pan,
  2. Add peppers and cook in high heat constantly stirring until tender,
  3. Remove the peppers from the oil into a bowl,
  4. Add tomato paste into the oil and cook for 2-3 mins,
  5. Add water and stir until the lumps disappear,
  6. Add vinegar, sugar and salt if necessary and mix,
  7. Simmer until set and then remove from heat,
  8. Chop or smash garlic cloves and add into yogurt with some salt, mix well,
  9. Add peppers and mix,
  10. Lay yogurt salad into a serving plate,
  11. Pour tomato sauce on top,
  12. Garnish with chopped parsley.
