Fried Mussel Skewers Recipe
One of the dishes we can't help but eat at fish restaurants in Turkey is fried mussel skewers (midye tava). When we see it on the menu, with its crispy consistency and delicious taste, we cannot pass without ordering. First of all, there are very few ingredients. Of course, oil is required for frying. Apart from mussels, flour, sparkling water or water and salt are used. It is a kind of tempura like eggplant tempura. You can make tempura dough with sparkling water or water. There is no difference in terms of crunchiness, but a slight difference is felt in terms of the type of crunchiness. When sparkling water is used, it has a slightly bubbled appearance. Since the ingredients are very few and simple, there is no trick about the ingredients, but the cooking part is important. Since it is cooked in deep and hot oil, it is useful to pay attention to safety. If water remains inside the mussels and this water comes into contact with the hot oil, it will explode. Therefore, it is useful to dry the mussels thoroughly with a paper towel before dipping them into the tempura dough.
It is very important that the oil is well heated so that the dough is well cooked and crispy without absorbing oil. As soon as you put the mussels in the oil, they should start cooking. Since mussels are a very easy food to cook, it is not possible for them not to be cooked during the cooking time of the tempura dough. Don't worry about it.
After cooking the mussels, remove them on a grill or strainer to drain excess oil. When you remove it on paper towel, the oil accumulated on the paper towel will causes the part that comes into contact with the mussels to soften. When you use a grill or a strainer, it retains its crispiness as air will be drawn from the bottom. Of course, this method only works to preserve the crispiness of your first baked goods. They cannot stay crispy for long. That's why you need to serve them immediately.
Tarator sauce is a must for mussels, of course. Pan mussels is a very delicious food, but it is much more delicious with tarator sauce.

Ingredients
- 200 g mussels (shells removed),
- 1/2 cup of flour,
- 1/2 cup of sparkling water or water,
- 1/2 teaspoon of salt,
- 400 ml of oil for frying.
Preparation
