Chicken Quesadilla Recipe

Quesadilla is a dish from Mexican cuisine, but especially in recent years, it has become something that's made and consumed almost everywhere. Traditionally, it was made only with corn tortillas and a special type of cheese unique to Mexico. Over time, it started to be made with all sorts of different ingredients. We mostly know the versions with meat or chicken, but for Mexicans, that’s probably like us making baklava with chocolate. Old-school folks might be thinking, “What’s chicken doing in a quesadilla anyway?”
Like every dish, this one also has different ways of being prepared. While some are made by placing the filling between two tortillas, others are made by folding a single tortilla in half. They can be pressed and flattened like a toastie, or made like a sandwich with lots of filling and no pressing at all. They can be cooked in a pan by flipping, or baked in the oven as well.
The original version is cooked over a wood fire in wide pans similar to the ones we use to cook flatbread or yufka in Turkey. So if you have one of those pans, you can totally make it on that too.
Tortilla is basically what you end up buying when you go to the store to get lavash. You might never have read the label, but most of them actually say “tortilla” or even both “tortilla” and “lavash.” Because truth be told, they’re tortillas, not lavash. I honestly don’t know why, in a country that has a bread called lavash in its food culture, we have more tortillas than actual lavash — and why real lavash isn’t being produced. Recently, one brand released something closer to lavash under the name “tandoor bread,” but that's about it. Weirdly, there’s no real lavash on the market that you can wrap your homemade kebab in. If anyone in the food industry is reading this, please take note and fill this gap. And while you're at it, if you could make it without additives, that would be amazing.

Ingredients
- 1 whole chicken breast, chopped,
- 1 onion, chopped,
- 8 mushrooms, chopped coarsely,
- 1 red pepper, chopped coarsely,
- 1 green pepper, chopped coarsely,
- 2 cups shredded cheddar cheese,
- 3 tablespoons oil,
- Salt to taste,
- Black pepper to taste,
- 3 tbsps vegetebale oil,
- 4 tortilla.
Preparation
- Heat oil in a pan,
- Add into the onion and sautee until tender,
- Add the chicken and sautee until tender,
- Add mushrooms and peppers and saute until tender,
- Add salt and pepper, stir and remove from heat,
- Place a tortilla on the counter,
- Sprinkle 2 tbsps shredded cheese over,
- Place 1/4 of the chicken mixture over,
- Place 2 tbsps of cheese again and fold into two,
- Prepare the remaining tortillas in the same way,
- Arrange the tortillas into an oven tray and bake in a 170 degrees pre-heated oven until the cheese melts.
