Budget Vegan Pesto Recipe
Pesto sauce is one of those flavors that blows people's minds with its smell and taste. It is also quite easy to make. Since it is a sauce prepared without cooking, the only thing that needs to be done is to take all the ingredients in a food processor and pulse. When a recipe has so many good features, a saying comes to mind; "What is the catch?". So we ask ourselves something can't be that perfect, it definitely has a flaw, what's wrong with it?
The bad part about original pesto recipe is that it is a costly sauce. Many of the ingredients used in it are quite expensive. Almost all of the ingredients, especially parmesan and pine nuts, including basil and virgin olive oil, are ingredients that make you think about whether it is worth it when using. In fact, the cheapest ingredients in the recipe are salt and garlic. This removes pesto sauce from the list of sauces that can be used any time and puts it in the category of sauces to be used on special occasions. But it doesn't always have to be like this.
It is possible to make a cheaper way of making pesto by changing the ingredients of the pesto. You might be wondering if cheap pesto is possible why do we make expensive pesto. The answer is very simple. Of course because of its taste. Although it is difficult to visually separate the affordable pesto you see in the photos from the pesto sauce recipe, as you can imagine, the same cannot be said for its taste.
Using walnuts in inexpensive pesto can provide a taste that is a little closer to medium-priced but real pesto. You can use walnuts if you can. But if that's not possible and peanuts are a better alternative for you, be prepared to have a distinctive peanut flavor and smell in your pesto. Although using raw peanuts reduces this possibility, it does not eliminate it. Note that this flavor will be more intense if you use roasted peanuts. Although it increases the cost a little, another ingredient that will bring the taste closer to the original is nutritional yeast. Do not mix nutritional yeast with the yeast you use to make bread. Nutritional yeast is a stand-alone product. It is a natural ingredient used in many vegan dairy product recipes, as it has an aroma close to the flavor and smell of cheese. You can easily buy nutritional yeast from online shopping sites. If you want to use nutritional yeast in budget vegan pesto, 2 teaspoons will be enough.
You can easily use budget vegan pesto in all types of pesto recipes such as pesto pasta or pesto potato recipe.

- Yodan: I have just discovered your wonderful website and am loving the excellent recipes. As you recommend, I also don't use the pine nuts & parm in my pesto. For years, I've used ingredients similar to yours, but instead of peanuts, I use almonds. This way there's no 'peanut flavor' to look out for. I make fairly large batches of the pesto and store it in the refrigerator, then use it on almost everything - sandwiches, pasta, bean salads, etc. June 29, 2023 11:27 am
