Baked Chicken Nuggets Recipe
This baked chicken nugget recipe is one I discovered by chance. When I tell you how I came across it, you’ll understand just how perfect it is for certain situations. One evening, after a long day of work and house cleaning, I managed to drag myself to the kitchen and grabbed some chicken from the fridge.
Initially, I had thought of making baked parmesan chicken bites. However, I didn’t have the time or energy to cut the chicken into small pieces and coat each bite with egg and breadcrumbs one by one. So, I decided to throw something together quickly and bake it. After all, it’s chicken – it’ll be good no matter what! When I tasted it, I realized this rushed dish was actually something worth sharing with you. I remade it as soon as possible and captured it in photos and video.
I added a little bit of paprika to the cornmeal I used for coating the chicken, which gave it a lovely deep red color, similar to fried nuggets. Since it doesn’t have a thick outer coating, it doesn’t have an extreme crunch, but it’s not dry like some baked chicken dishes either. Instead, it’s tender, almost like butter.
You can serve the chicken nuggets with ketchup and garlic yogurt.

Ingredients
- 500 g chicken breast,
- 1/2 cup cornmeal,
- 1 teaspoon sweet ground red pepper,
- 1/4 teaspoon salt.
- 2-3 tablespoons olive oil.
Preparation
- First, fillet the chicken breast and then cut it into large chunks,
- In a bowl, mix the cornmeal, red pepper, and salt,
- Coat the chicken pieces in this mixture, and arrange them on a baking tray lined with parchment paper,
- Spray or drizzle olive oil over the chicken pieces,
- Bake in a preheated oven at 200°C (390°F) until golden.
