Turkish Almond Paste Recipe

How is Almond Flour Made?
Edirne almond paste is very, very easy to make at home. First of all, the amount of material is very small. Only three ingredients are enough. A must, of course, is almonds. I use directly almond flour/powder. But if you wish, you can also make almond flour yourself. What you need for this is unshelled raw almonds. What you need to do to turn unshelled almonds into almond flour is to take the almonds in a food processor and grind them into flour.
Once you have the almond flour, just follow the recipe step by step. To make almond paste, you need a mixture that will bring the almond flour together. This mixture is a syrup made with one to one measure and not boiled much. If you want to make a much more sugary and sticky almond paste, you can boil the syrup for a long time like baklava syrup and thicken it. While doing this, at the last point, you should adjust the amount so that you still have 1 cup of syrup in your hand, or be more careful when adding almond flour to the syrup and add almond flour little by little, it will make it easier for you to reach the consistency you want.
In this way, you can make almond paste in its simplest form, or you can make different versions. You can add lemon peel, orange peel or vanilla to obtain different flavored almond pastes. You can make chocolate covered almond paste by coating the almond paste with melted chocolate. What you need to be careful about when making such changes is that the change you make does not spoil the consistency of the almond paste mixture.

Preparation
- Take the sugar and water in a sauce pan, mix and simmer until the sugar dissolves, remove from heat,
- Add the almond flour to the syrup little by little and mix,
- Take the mixture on a large piece of cling film and turn it into a thick wick,
- Wrap the wick with the film,
- Put it in the fridge and let it rest for a few hours,
- Slice and serve.
