Traditional Hanım Aga (Landlady) Soup

Traditional Hanım Aga (Landlady) Soup


  • 1 onion, chopped,
  • 1/2 cup green lentils,
  • 1/2 cup chickpeas,
  • 1/2 cup vermicelli,
  • 1/2 cup eriste (Turkish home made noodle, you can use pasta instead),
  • 2 tbsps tomato paste,
  • 1 tbsp butter,
  • 2 tsps ground red pepper,
  • 5 cups water,
  • 2 cups chicken of beef broth,
  • Salt,
  • Dried mint.


  1. Boil chickpeas and green lentils until half cooked, then drain,
  2. In a pan melt butter and add onion,
  3. Add tomato paste and cook for a few mins.,
  4. Add ground pepper and stir,
  5. Add water and broth and stir,
  6. Add eriste, vermicelli, chickpeas and green lentils,
  7. Cook until all ingredients are tender,
  8. Add salt and dried mint according to your taste.
