Traditional Hanım Aga (Landlady) Soup
Serving : 6 Servings
Ingredients
- 1 onion, chopped,
- 1/2 cup green lentils,
- 1/2 cup chickpeas,
- 1/2 cup vermicelli,
- 1/2 cup eriste (Turkish home made noodle, you can use pasta instead),
- 1 tbsp tomato paste,
- 5 cups water,
- 4-5 tbsps olive oil,
- Salt,
- Dried mint.
Preparation
- Boil chickpeas and green lentils until half cooked, then drain,
- In a large pan heat olive oil, add onion and cook until tender,
- Add tomato paste and cook for a few mins.,
- Add water, eriste, vermicelli, chickpeas and green lentils,
- Cook until all ingredients are tender,
- Add salt and dried mint according to your taste.
