Traditional Hanım Aga (Landlady) Soup

Ingredients

  • 1 onion, chopped,
  • 1/2 cup green lentils,
  • 1/2 cup chickpeas,
  • 1/2 cup vermicelli,
  • 1/2 cup eriste (Turkish home made noodle, you can use pasta instead),
  • 1 tbsp tomato paste,
  • 5 cups water,
  • 4-5 tbsps olive oil,
  • Salt,
  • Dried mint.

Preparation

  1. Boil chickpeas and green lentils until half cooked, then drain,
  2. In a large pan heat olive oil, add onion and cook until tender,
  3. Add tomato paste and cook for a few mins.,
  4. Add water, eriste, vermicelli, chickpeas and green lentils,
  5. Cook until all ingredients are tender,
  6. Add salt and dried mint according to your taste.
