Sour Bulghur Kofta And Chickpeas Soup Recipe
Serving : 4 Servings
Ingredients
- 1,5 cup canned chickpeas,
- 1 tbsp tomato paste,
- 2 tsps ground red pepper,
- 1 tomato, grated,
- 1 tbsp butter,
- 1/2 cup hot water,
- 1 tbsp ground sumac,
- 1/2 tbsp dry mint,
- Salt to taste,
- 5 cups hot water.
For Bulghur Kofta;
- 3/4 cup thin bulgur wheat,
- 1/4 cup semolina,
- 1,5 cups water,
- 1/2 cup flour,
- 2 teaspoons tomato paste,
- Salt.
Preparation
- Add ground sumac to 1/2 cup hot water and set aside for 30 mins. and then drain (we will use the water only),
- In the meantime place the bulgur, somolina, salt and water in a saucepan and cook over very low heat until all the water is absorbed,
- Once the mixture cools down, add flour and tomato paste, then start mixing with your hands,
- Make small round balls from the mixture,
- Pour some flour in a large baking sheet and put balls in it,
- After all the balls are complete shale the sheet and make all the balls covered with flour,
- In a pan melt the butter,
- Add tomato paste and cook for 3-4 mins., constantly stirring,
- Add ground pepper and stir,
- Add grated tomato and cook 2-3 mins.,
- Add water and stir well,
- When the water starts to boil add bulghur kofta balls and cook for 10-15 mins., constantly stirring,
- Add chickpeas and sumac water and cook for another 5 mins.,
- Add salt, stir and remove from heat.
