Baked Salmon Stew Recipe
Serving : 4 Servings
Ingredients
- 400 gr salmon fillets,
- 300 gr mushrooms,
- 1 onion,
- 2 green peppers,
- 3 tomatoes,
- 1/2 cup cooked peas,
- 1/2 cup cooked carrots cut into cubes,
- 1/4 cup olive oil,
- Salt,
- Black pepper.
Preparation
- Cut the salmon into cubes and place in the casserole dish (remove any skin),
- Sprinkle some salt and black pepper on top and bake at 200 degrees celsius,
- In the meantime, finely chop the onion and sauté in vegetable oil until translucent,
- Add the diced peppers and stir for 2-3 mins,
- Add the sliced mushrooms and cook until softened,
- Finally add the peeled and diced tomato and cook for 5 more mins, occasionally stirring,
- Remove the salmon from oven when softened and add the vegetable mixture into the casserole dish,
- Add more salt and stir everything really well,
- Put back to the oven and bake for 20-25 mins or until everything is fully cooked.
