Pea Soup Recipe
Ingredients
- 400 g fresh peas (about 1 kg peas in shell),
- 1 onion, chopped,
- 1 tablespoon butter,
- 2 tablespoons flour,
- 4-5 cups of water,
- 1 cup of milk,
- Salt,
- Black pepper.
Preparation
- Heat the butter in a deep pan,
- Add the onion and sautee until soften,
- Add peas and stir,
- Cover the lid and cook until almost tender, stirring occasionally,
- Add the flour and stir, cook for a few mins. stirring constantly,
- Add 4 cups of water at room temperature and stir,
- Cook in low heat until the peas are fully tender,
- Puree the soup with a hand blender,
- Check the consistency and add water if necessary,
- Cook 5-10 min. more in low heat,
- Add the milk and cook for a few mins. more,
- Add salt and pepper, stir and remove from heat.
