Homemade Pasta Recipe

 

Serving : 4 Servings

Ingredients

  • 2 cups flour,
  • 2 eggs,
  • 2 tablespoons vegetable oil,
  • 1 tablespoon water (add 1-2 more tablespoons if needed),
  • 1 teaspoon salt,
  • Water to boil,
  • 1 tablespoon butter,
  • 2 teaspoons salt.

For Sauce:

  • 1 onion, chopped,
  • 3 tomatoes, grated,
  • 1 tbsp tomato paste,
  • 1 clove of garlic, minced,
  • 3-4 tbsps olive oil,
  • A pinch of pepper flakes, dried thyme and dried mint,
  • Salt.

Preparation

  1. In a large bowl combine together flour and salt,
  2. Add in the eggs, oil and water,
  3. Mix everything well,
  4. Knead until everything comes together to form a soft non-sticky dough (add 1-2 tablespoons of water if the dough is too tough),
  5. Cover the dough with a wet kitchen towel and let rest for 15 mins,
  6. Cut the dough into three pieces and work with one piece at a time, while the others are resting under the wet towel,
  7. Roll out the dough on a well floured surface to you desired thinness,
  8. Roll the dough and cut into desired thickness,
  9. Unroll the pieces and hang them on a floured surface,
  10. Prepare the other pieces of dough in the same way,
  11. For sauce heat oil in a pan, add into the onion and sautee until tender,
  12. Add garlic and stir,
  13. Add the tomato paste and cook until smells well,
  14. Add grated tomato and cook until set,
  15. Add spices and salt, stir and remove from heat,
  16. Boil the pasta in salted water and drain,
  17. Blanch the cooked pasta with cold water,
  18. Melt the butter in the pot and place the pasta back into the pot and stir,
  19. Serve with the sauce over.
