Grilled Vegetable Salad Recipe

Ingredients

  • 2 zucchinies,
  • 2 eggplants,
  • 2 red peppers,
  • 2 tbsp olive oil,
  • 1 handful of chopped parsley,
  • 1 handful of chopped fresh mint,
  • Salt to taste.

Preparation

  1. Wash, drain and slice zucchnies, peppers and eggplants,
  2. Heat the grill and place the vegetables on top,
  3. Grill both sides according to your taste,
  4. In a deep bowl combine grilled vegetables, chopped greens, olive oil and salt,
  5. Transfer to the serving plate.
