- 2 zucchinies,
- 2 eggplants,
- 2 tbsp olive oil,
- 1 slice light feta cheese,
- 2 tbsp canned corn,
- 3 tsps flaxseed,
- 1 handful of chopped parsley,
- Salt to taste.
- Wash, drain and slice zucchnies and eggplants,
- Heat the grill and place the vegetables on top,
- Grill both sides according to your taste,
- In a deep bowl combine grilled vegetables, olive oil and salt,
- Add corn, parsley, flaxseed and mashed cheese, mix well,
- Transfer to the serving plate.
