Grilled Vegetable Salad Recipe
Serving : 2 Servings
- 2 zucchinies,
- 2 eggplants,
- 2 red peppers,
- 2 tbsp olive oil,
- 1 handful of chopped parsley,
- 1 handful of chopped fresh mint,
- Salt to taste.
- Wash, drain and slice zucchnies, peppers and eggplants,
- Heat the grill and place the vegetables on top,
- Grill both sides according to your taste,
- In a deep bowl combine grilled vegetables, chopped greens, olive oil and salt,
- Transfer to the serving plate.
