Forest Kebab in a Tortilla Plate
Serving : 4 Servings
Ingredients
- 4 tortillas,
- 250 gr. beef cut into small cubes,
- 1/2 cup cooked frozen peas,
- 1/2 cup cooked potatoes cut into small cubes
- 1/2 cup cooked carrots cut into small cubes,
- 1 onion,
- 1 tablespoon tomato paste,
- 2 teaspoons paprika,
- 3/4 cup vegetable oil,
- Water,
- Salt,
- Black pepper,
- Vegetable oil to fry the tortillas.
Preparation
- Heat the vegetable oil in a pressure cooker,
- Place the meat in the pan and sauté over high heat until the meat turns brown on all sides,
- Lower the heat and add the finely chopped onions,
- Cook while stirring until the onions become tender,
- Add the tomato paste and stir for 1 minute,
- Add the paprika and stir,
- Add enough water to submerge the meat,
- Put the lid on and cook the meat according to the user instructions of your pressure cooker,
- Trim the tortillas from the sides to make them the size of small dessert plates,
- Heat the vegetable oil in a pan with high sides,
- Fry 1 tortilla at a time while pressing the centre of the tortilla down with spoon to create a hollow in the middle (each tortilla will serve as a bowl for the meat filling),
- When the meat is fully cooked, open the lid of the pressure cooker and stir in the frozen peas, cooked potato and carrot cubes,
- Add the salt and pepper, stir and cook for 5 more minutes,
- Place some of the meat filling inside the fried tortillas and serve.
