Diet Shepherds Pie With Chicken Breast
Ingredients
- Half of a chicken breast, diced,
- 1 large onion, chopped,
- 2 green peppers, chopped,
- 2 cloves of garlic,
- 2 tbsp tomato purée,
- 2 tomatoes, diced,
- 1/2 cup canned peas,
- 1 cup hot water,
- 2 tsps ground red pepper,
- Salt, cumin and black pepper to taste.
For Potato Purée;
- 1 potato,
- 1/2 cup fatless milk,
- 1/4 tbsp grated parmesan,
- Salt and black pepper.
Preparation
- Peel and quarter potatoes, boil in salted water until tender (about 20 minutes),
- While the potatoes are cooking put chicken breast into large pan and cook until it turns to white,
- Add and sauté onions and green peppers until tender over low heat (10 mins),
- Add tomato purée and cook 2-3 mins,
- Add salt and spices and stir well,
- Add tomato and cook over low heat, lid covered for 5-10 mins. and remove from heat,
- For the puree mash potatoes in bowl with milk and season to taste,
- Place chicken breast mixture in a baking dish,
- Distribute mashed potatoes on top,
- Sprinkle the parmesan on top,
- Cook in 190 C degrees oven until golden (about 30 minutes).
