Chicken Turmeric Rice Recipe
Serving : 8 Servings
Ingredients
- 1 small whole chicken,
- 2 cups of rice,
- 2 cups boiled chickpeas,
- 1 onion,
- 2 tablespoons of butter,
- 2 tablespoons of vegetable oil,
- 2 cups of chicken broth (the broth you boiled the chicken),
- 2 cups of boiling water,
- 1/2 cup currant,
- 1 tsp turmeric,
- 1/4 tsp black pepper,
- Salt to taste.
Preparation
- After thoroughly washing the chicken, take in a pot, add enough water, salt and halved onion and cook until the chicken is soft,
- Remove the chicken out of the broth and drain the broth with a strainer,
- Shred the chicken,
- Wash the rice thoroughly and drain,
- Take the butter and oil in a large pot and heat,
- Add the rice and roast until the rice starts sticking together,
- Add salt, turmeric, black pepper, currants, shredded chicken, chicken broth and water,
- Close the lid and let it cook in low heat until the rice absorbs all the water and become tender,
- Remove from heat and set aside for 10-15 mins. before serving.
