Chicken Kofta On Tomato Sauce Recipe
Ingredients
- 500 g chicken breast,
- 1 egg,
- 1 onion,
- 2 tablespoons bread crumbs,
- 2 teaspoons cornstarch,
- 1 teaspoon baking soda,
- 1 tablespoons minced parsley,
- 1 tablespoon olive oil,
- Salt,
- Black pepper,
- Cumin,
- 2 tbsps vegetable oil for topping.
For Sauce;
- 1 onion, chopped,
- 1 green pepper, chopped,
- 2 large tomatoes, grated,
- 1 tbsp tomato paste,
- 2 tsps chilli,
- 2 tsps dried mint,
- Salt to taste,
- 3 tbsps vegetable oil,
- 1/2 cup boiling water.
Preparation
- Whiz the chicken breast up in a food processor to make ground chicken,
- Add the chicken, grated onion, egg and the rest of the ingredients into a large ball and mix everything together with your hands,
- Form them into walnut sized balls,
- Place them into a baking pan covered with parchement paper,
- Brush with vegetable oil,
- Bake in a 190 C degrees pre-heated oven unyil golden on top,
- For sauce heat vegetable oil in a large pan,
- Add onions and cook until tender,
- Add peppers and cook until tender,
- Add tomato paste and cook for 2-3 mins, stirring,
- Add chilli and grate tomato, cook for 5-6 mins in low heat,
- Add water, salt and dried mint and cook until set,
- Pour the sauce into a serving plate,
- Place the koftas into the sauce.
