Chicken Kofta On Tomato Sauce Recipe

Ingredients

  • 500 g chicken breast,
  • 1 egg,
  • 1 onion,
  • 2 tablespoons bread crumbs,
  • 2 teaspoons cornstarch,
  • 1 teaspoon baking soda,
  • 1 tablespoons minced parsley,
  • 1 tablespoon olive oil,
  • Salt,
  • Black pepper,
  • Cumin,
  • 2 tbsps vegetable oil for topping.

For Sauce;

  • 1 onion, chopped,
  • 1 green pepper, chopped,
  • 2 large tomatoes, grated,
  • 1 tbsp tomato paste,
  • 2 tsps chilli,
  • 2 tsps dried mint,
  • Salt to taste,
  • 3 tbsps vegetable oil,
  • 1/2 cup boiling water.

Preparation

  1. Whiz the chicken breast up in a food processor to make ground chicken,
  2. Add the chicken, grated onion, egg and the rest of the ingredients into a large ball and mix everything together with your hands,
  3. Form them into walnut sized balls,
  4. Place them into a baking pan covered with parchement paper,
  5. Brush with vegetable oil,
  6. Bake in a 190 C degrees pre-heated oven unyil golden on top,
  7. For sauce heat vegetable oil in a large pan,
  8. Add onions and cook until tender,
  9. Add peppers and cook until tender,
  10. Add tomato paste and cook for 2-3 mins, stirring,
  11. Add chilli and grate tomato, cook for 5-6 mins in low heat,
  12. Add water, salt and dried mint and cook until set,
  13. Pour the sauce into a serving plate,
  14. Place the koftas into the sauce.
