Cheese Filled Ravioli Recipe


  • 2,5 cups flour,
  • 3 eggs (at room temperature),
  • 1 tsp salt,
  • 200 g any cheese combination (I used feta+cottage+parmesan),
  • Water,
  • Melted butter for topping.


  1. In a deep bowl combine flour and salt,
  2. Add eggs and knead until the dough becomes firm and elastic,
  3. Make a ball and cover with a damp cloth, set aside for 10-15 mins.,
  4. Split the dough into 4 equal pieces,
  5. Spread some flour on the counter,
  6. Roll one portion to  0.15 mm thickness. (Keep pasta covered until ready to use),
  7. Working quickly, place rounded dessertspoonfuls of filling 2-3 cm. apart over half of pasta sheet,
  8. Brush around filling with water to moisten,
  9. Fold sheet over; press down to seal,
  10. Cut into squares with a pastry wheel,
  11. Repeat with remaining dough and filling
  12. Bring a soup kettle of salted water to a boil,
  13. Add ravioli,
  14. Reduce heat to a gentle simmer; cook for 1-2 minutes or until ravioli float to the top and are tender, drain,
  15. Pour melted butter over.
