Banana Tiramisu Cups
There is a dessert on the blog today that remains very practical compared to its image. It's a top recipe for friends who call and say that they are coming for a cup of tea or coffee in a few hours. You can prepare right away, put it in the refrigerator, and have it ready for serving in 15 minutes at most.
Lady finger biscuits are what Italians call biscotti savoiardi. They have a foamy structure and soak lots of fluid. Somehow, don't keep them in the coffee too much when you dip them and take them out immediately. Otherwise, they will be doughy.
Place four pieces of biscuits in each mug, facing each other. If you wish, you can break the biscuits and lay them in layers, it will not change anything in its taste.
When you make the cream for the first time, it is a little thick, so at least it is not a liquid consistency. What gives the cream its real consistency is mascarpone. But do not add all the cheese at once. The amount you need to use will vary depending on the ingredients you use, your cooking time, the consistency you want and the cheese you use. Add little by little and whisk. Continue in the same way until the consistency of the cream reaches the desired consistency. If you have added the whole amount but it does not reach the consistency you want, you can add some more. Also, check the sugar amount. If it's not enough for you, you can add a little more. You can make it melt by whisking, don't worry there won't be any grains in it. But keep in mind that sugar will also liquefy the consistency of the cream.
Don't get scared about solid ingredients while cooking puddings or pastry creams. If it is denser than you expected, you can change its consistency by adding butter, heavy cream, mascarpone, etc. But if it is liquid, it will not be so easy to thicken its consistency. Therefore, always use spoons full of flour, starch, etc., even if it is not specified in the recipe.
As for the coffee used in the recipe... I use filtered coffee. But if you wish, you can also use instant coffee. If you want to use Turkish coffee, you should completely strain the grounds.
If you wish, you can skip banana, you can make it plain, or you can use any other fruit that you think would suit tiramisu instead.
The cocoa powder you sprinkle on it does not make the dessert bitter. Do not be afraid. It just adds a pleasant aroma and takes away the sweetness of the dessert.
