Baked Vegetable Kofte Recipe
Serving : 15 patties
Ingredients
- 1 celery root,
- 1 potato,
- 1 zucchini,
- 1 carrot,
- 1 onion,
- 1 egg,
- 1/2 cu chopped parsley,
- 2 tbsp. vegetable oil,
- 5 tbsp. bread crumbs,
- 1/2 cup grated parmesan cheese,
- 1/2 tsp. black pepper,
- 1/2 tsp. cumin,
- Salt to taste.
Preparation
- Take celery root, potato, zucchini and carrot in a skillet and add hot water just enough to completely cover the veggies and cook for 7 mins in medium heat,
- Drain veggies and let cool in a sieve,
- Chop the onion,
- Mash the boiled veggies with a potato masher,
- Add chopped onions, egg, bread crumbs, grated parmesan, chopped parsley, vegetable oil, spices and salt and knead until mixed well,
- Make 15 patties and place on a csprayed cooking sheet,
- Bake at 210 C degrees until golden,
- Serve hot.
