Baked Vegetable Kofte Recipe

Serving : 15 patties

Ingredients

  • 1 celery root,
  • 1 potato,
  • 1 zucchini,
  • 1 carrot,
  • 1 onion,
  • 1 egg,
  • 1/2 cu chopped parsley,
  • 2 tbsp. vegetable oil,
  • 5 tbsp. bread crumbs,
  • 1/2 cup grated parmesan cheese,
  • 1/2 tsp. black pepper,
  • 1/2 tsp. cumin,
  • Salt to taste.

Preparation

  1. Take celery root, potato, zucchini and carrot in a skillet and add hot water just enough to completely cover the veggies and cook for 7 mins in medium heat,
  2. Drain veggies and let cool in a sieve,
  3. Chop the onion,
  4. Mash the boiled veggies with a potato masher,
  5. Add chopped onions, egg, bread crumbs, grated parmesan, chopped parsley, vegetable oil, spices and salt and knead until mixed well,
  6. Make 15 patties and place on a csprayed cooking sheet,
  7. Bake at 210 C degrees until golden,
  8. Serve hot.
