Baked Chicken Thigh with Peas Recipe

Serving : 4 Servings

Ingredients

  • 4 chicken thighs,
  • 1 carrot, chopped,
  • 2 handful of colorful cherry tomatoes,
  • 1 cup of canned peas,
  • 1 tablespoon tomato paste,
  • 2 tablespoons olive oil,
  • Black pepper,
  • Salt,
  • 2 cups of water.

Preparation

  1. Place chicken thighs and chopped carrots into a small baking dish,
  2. Brush with olive oil,
  3. Bake in a 190 C degrees oven until the chickens are tender,
  4. In a bowl combine tomato paste with 2 cups of water, salt and pepper, mix well,
  5. Pour the mixture over chickens,
  6. Place tomatoes into the dish also,
  7. Bake until the tomatoes are tender,
  8. Add the peas and bake again until set.
