Çiğ Köfte Sushi Recipe
Çiğ köfte sushi or sushi çiğ köfte is a new generation fast food that has become very popular in Turkey recently. In essence, it is just çiğ köfte; it has no connection with sushi in terms of ingredients. What makes the dish called sushi is its appearance. Çiğ köfte is spread on lavash bread and wrapped in a roll shape, with different ingredients placed in the middle. This makes the çiğ köfte look like sushi.
From time to time, the rolls are covered in spicy nahos chips, parsley or ingredients such as hazelnuts and walnuts. I made two different varieties. I put chopped iceberg lettuce and grated carrots in one of them and covered it with spicy nachos chips that I crushed into crumbs in a plastic bag. I put crushed chips in the middle of the other one and coated the outside with chopped parsley.
Since it was very popular on social media and people who tasted it gave extreme reactions, I prepared it without thinking about it, assuming that it would go well with çiğ köfte and be very delicious, but I was a little disappointed. Yes, wrapping çiğ köfte in lavash like sushi looks very nice. This does not contribute positively or negatively to its taste anyway. That wonderful çiğ köfte taste you know remains in its place. But chips don't help anything. In fact, in my opinion, it would be better if it was made without chips. But since it is so popular, it means there are people who like it.
By the way, I have a çiğ köfte recipe that everyone has loved for years. Its taste is truly wonderful. But since the ingredients list is a bit long, it's a bit of a hands-on recipe. I created a simpler recipe for this çiğ köfte sushi. I am quite satisfied, but your opinions are very important to me. So I would appreciate it if you could give me feedback after trying it.
I used the lavash recipe for lavash. I baked it by rolling it into a rectangular shape, not a round one, just to make it easier to wrap.
If you do not consume gluten, you can make it using gluten-free çiğ köfte and gluten-free tortilla recipes.
Since lavash gets wet with the effect of çiğ köfte and pomegranate syrup, it should be consumed shortly after making sushi rolls. If you are going to consume çiğ köfte some time after preparing them, I recommend that you do the wrapping process just before eating.

Çiğ Köfte Sushi Recipe with Video
Ingredients
For çiğ köfte;
- 2 cups of fine bulgur,
- 1 cup of boiling water,
- 1 tablespoon of pepper paste,
- 1 tablespoon of tomato paste,
- 1 cup of ground walnuts,
- 1/2 cup of pomegranate syrup,
- 5 tablespoons of olive oil,
- 3 level tablespoons of isot pepper,
- 2 teaspoons of chili pepper flakes (if the pepper paste is not spicy),
- 1 handful of chopped parsley,
- Salt to taste.
For sushi rolls;
- 4 lavash,
- Chopped iceberg lettuce,
- Grated carrots,
- Pomegranate syrup,
- Spicy chips,
- Chopped parsley.
Preparation
- Place the bulgur on a large tray, add salt, pour the water over it and mix,
- Wait five minutes for the bulgur to absorb the water,
- Add pepper paste, tomato paste, pomegranate syrup, olive oil, chili pepper flakes, parsley and isot and mix,
- Add walnuts and mix,
- Ground the mixture through a hand blender,
- Knead until combined,
- Taste and add any missing ingredients for your taste and knead again
- Spread one quarter of the çiğ köfte in a thin layer on a large lavash,
- Put chopped iceberg and grated carrots on the long side and wrap it in a roll shape,
- Apply pomegranate syrup on the outside using a brush,
- Cover it with crushed spicy chips,
- Wrap the remaining çiğ köfte using the stuffing of your choice and coat them with the ingredients you want,
- Slice the roll into slices about two fingers thick,
- Serve with pomegranate syrup.
