Upside Down Fried Potato Recipe

Upside Down Fried Potato Recipe

Ingredients:

  • 2 big sized potatoes, boiled,
  • 1 red pepper,
  • 1 carrot,
  • 1 handful chopped parsley,
  • 3 tbsp vegetable oil,
  • 1 large egg,
  • 1/4 cup milk,
  • Salt and pepper to taste.

Preparation:

  1. Chop potatoes in large cubes,
  2. Chop red pepper,
  3. Peel and grate the carrot,
  4. Combine all vegetables in a large bowl and add salt and pepper,
  5. Knead gently with your hands,
  6. Pour the vegetable oil in a 24 cm pan,
  7. Spread the mixture into the pan evenly,
  8. Cover the lid and cook in low heat until the bottom is crispy,
  9. In a different bowl beat egg and milk together with a pinch of salt,
  10. Pour the mixture on top of the pan evenly,
  11. Cover the lid again and cook until the egg is well done,
  12. Turn the dish upside down into a large service plate.
