Spinach Tortilla Rolls Spinach Tortilla Rolls


  • 1 bunch spinach,
  • 1 onion,
  • 1 tablespoon tomato paste,
  • 2 teaspoons paprika,
  • 4 tablespoon olive oil,
  • 5 tortillas,
  • Grated gouda, cheddar or swiss.


  1. Finely chop the onion and sauté in olive oil until translucent,
  2. Stir in the tomato paste and cook for 2 mins,
  3. Add in the paprika and stir,
  4. Add in the finely chopped spinach and cook until the spinach withers and reduces in volume,
  5. Add in the salt, stir and remove from heat,
  6. Spread the spinach mixture evenly over the tortillas,
  7. Then sprinkle on a thin layer of grated cheese,
  8. Roll and secure using toothpicks,
  9. Then cut into thick slices and place on a baking sheet lined with parchment paper cut side down (leaving 1 toothpick in each slice),
  10. Bake at 220 degrees celsius for 10-15 mins,
  11. Remove the toothpick and serve hot or warm.
