Spinach Tortilla Rolls
Serving : 4-6 Servings
Ingredients
- 1 bunch spinach,
- 1 onion,
- 1 tablespoon tomato paste,
- 2 teaspoons paprika,
- 4 tablespoon olive oil,
- 5 tortillas,
- Grated gouda, cheddar or swiss.
Preparation
- Finely chop the onion and sauté in olive oil until translucent,
- Stir in the tomato paste and cook for 2 mins,
- Add in the paprika and stir,
- Add in the finely chopped spinach and cook until the spinach withers and reduces in volume,
- Add in the salt, stir and remove from heat,
- Spread the spinach mixture evenly over the tortillas,
- Then sprinkle on a thin layer of grated cheese,
- Roll and secure using toothpicks,
- Then cut into thick slices and place on a baking sheet lined with parchment paper cut side down (leaving 1 toothpick in each slice),
- Bake at 220 degrees celsius for 10-15 mins,
- Remove the toothpick and serve hot or warm.
