Sauteed Swiss Chard With Chickpeas

Ingredients:

  • 1 onion, chopped,
  • 700 g swiss chard, stalks removed and chopped,
  • 1 cup canned chickpeas,
  • 1 red pepper, julienned,
  • 1 tomato, diced,
  • 2 tbsps vegetable oil,
  • 1 tbsp tomato paste,
  • 3 tsps chilli pepper,
  • Salt to taste,
  • 2 cups boiling water.

Preparation:

  1. Heat vegetable oil in a large pan,
  2. Add onion and sautee until tender,
  3. Add red pepper and sautee for 1 min.,
  4. Add tomato paste and cook stirring for another few mins.,
  5. Add chilli pepper and tomato and cook for 2 mins.,
  6. Add swiss chard and sautee until tender,
  7. Add water and chickpeas,
  8. Cover the lid and cook until set in low heat.
