Potato Puff Recipe
Serving : 25 Pieces
Ingredients
- 2 eggs (1 egg yolk will be brushed in top),
- 1 cup milk,
- 100 gr butter,
- 1/2 cup olive oil,
- 5 cups flour,
- 40 gr. rapid-rise yeast (1 pack),
- 1 tablespoon granulated sugar,
- 2 teaspoons salt,
Filling;
- 3 medium size boiled potatoes,
- 1/2 cup grated cheddar,
- 2 teaspoons butter,
- 2 teaspoons paprika,
- 3 teaspoons salt.
- 1 teaspoons curry powder.
- Poppy seeds
Preparation
- Melt the butter in a small saucepan and mix it with the oil,
- Remove from heat and stir in the milk,
- In a large bow, stir together the flour, salt, sugar and yeast,
- Create an indent in the centre and place 1 egg and 1 egg yolk, then start mixing with your hands,
- Add in the milk mixture slowly while mixing with your hands, and knead until everything comes together to form a soft non-sticky dough,
- Cover and let it rest for 45 mins somewhere warm,
- Mash the potatoes,
- Stir in the cheddar, butter, salt, paprika and curry powder,
- Pull clementine size pieces from the risen dough, press using your palm, place some of the potato filling in the centre and mold the dough around the filling,
- Place all the stuffed pastries on a baking dish lined with parchment paper and let them rest for 20-25 more mins,
- Brush with egg yolk and sprinkle on some poppy seeds,
- Bake at 200 degrees celsius preheated oven until golden brown.
