Plum Galette Recipe


For the crust;

  • 1,5 cups flour,
  • 130 gr. cold butter (keep it in the freezer for 30 mins before using),
  • 1/4 cup granulated sugar,
  • 2 tablespoons ice water,

For the blackberry filling;

  • 4 large plums, halved, pitted, and each cut lengthwise into 8 wedges,
  • 1/2 cup sugar,
  • 1 heaping spoon of cornstarch.

For the top;

  • 1/2 tablespoon melted butter,
  • 1/3 tablespoon granulated sugar,
  • 1 heaping spoon of cornstarch.


  1. For the dough, mix together the flour and sugar in a bowl,
  2. Cut the butter into cubes and add to the bowl,
  3. Using your hands, rub the butter into the flour trying not to let the warmth your hands melt the butter,
  4. Then add the ice-cold water and knead until everything comes together to form a non-sticky dough,
  5. Wrap the dough in plastic wrap and place in the freezer for 10 mins,
  6. Roll the dough out on a floured surface to a 3 mm thick circle and place on a baking sheet lined with parchment paper,
  7. In a bowl combine sugar and cornstarch together,
  8. Sprinkle the mixture onto the dough leaving a 2.5 cm gap from the sides,
  9. Arrange plums, skin sides down, in 1 layer on top of sugar mixture,
  10. Fold the sides onto the topping, brush the crust with melted butter and sprinkle some sugar,
  11. Bake in an oven pre-heated to 190 degrees celsius, until the sides are golden brown.
