Plum Galette Recipe
Serving : 4-6 Servings
Ingredients
For the crust;
- 1,5 cups flour,
- 130 gr. cold butter (keep it in the freezer for 30 mins before using),
- 1/4 cup granulated sugar,
- 2 tablespoons ice water,
For the blackberry filling;
- 4 large plums, halved, pitted, and each cut lengthwise into 8 wedges,
- 1/2 cup sugar,
- 1 heaping spoon of cornstarch.
For the top;
- 1/2 tablespoon melted butter,
- 1/3 tablespoon granulated sugar,
- 1 heaping spoon of cornstarch.
Preparation
- For the dough, mix together the flour and sugar in a bowl,
- Cut the butter into cubes and add to the bowl,
- Using your hands, rub the butter into the flour trying not to let the warmth your hands melt the butter,
- Then add the ice-cold water and knead until everything comes together to form a non-sticky dough,
- Wrap the dough in plastic wrap and place in the freezer for 10 mins,
- Roll the dough out on a floured surface to a 3 mm thick circle and place on a baking sheet lined with parchment paper,
- In a bowl combine sugar and cornstarch together,
- Sprinkle the mixture onto the dough leaving a 2.5 cm gap from the sides,
- Arrange plums, skin sides down, in 1 layer on top of sugar mixture,
- Fold the sides onto the topping, brush the crust with melted butter and sprinkle some sugar,
- Bake in an oven pre-heated to 190 degrees celsius, until the sides are golden brown.
