Orange Leftover Cake Truffles
Serving : 15-16 Truffles
- 6 slices of any kind of poundcake,
- 5 soft dried apricots,
- 1 cup of ground walnuts,
- 1 small orange,
- Grated coconut.
- Grate the peel of the orange and squeeze the juice,
- Puree the apricots with a blender,
- Crumble the cake into a deep bowl,
- Combine the cake crumbles, walnuts, apricot puree, orange juice and grated peels in a deep bowl and knead untined combined,
- Make small balls and coat with grated coconut.
