Meringue Recipe



  • 2 egg whites,
  • 1 cup confectioners sugar,
  • A pinch of salt,
  • Cacao powder and cinnamon and confectioners sugar mixture for topping.


  1. Preheat the oven to 110 C,
  2. Place a parchment  paper in a baking sheet,
  3. In a glass or metal bowl, whip egg whites and salt until foamy using an electric mixer,
  4. Sprinkle in sugar a little at a time, while continuing to whip at medium speed,
  5. When the mixture becomes stiff and shiny like satin, stop mixing,
  6. Transfer the mixture to a large pastry bag,
  7. Pipe the meringue out onto the prepared baking sheet using a large round tip or star tip,
  8. Place the meringues in the oven,
  9. Bake for 45 mins.,
  10. Decrease the heat to 80 C and bake for another 30 mins.,
  11. Turn off the heat but don’t open the oven door until completely cool,
  12. Sprinkle cacao powder or cinnamon-confectioners sugar mixture on top,
  13. Store the cookies in an airtight container at room temperature.
