Dried Fruit Biscotti Recipe
Serving : 20-25 Pieces
Ingredients
- 2 eggs,
- 100 g butter, at room temperature,
- 2,5-3 cups flour,
- 3/4 cup sugar,
- 1 teaspoon baking powder,
- 1/4 tsp cinnamon,
- 1/2 cup raisins,
- 1/2 cup coarsely ground walnuts,
- 1/2 cup saltless pistachios,
- 6 dried apricots (cut into small cubes),
- 3 dried figs (cut into small cubes),
- 2 tablespoons of milk to brush on top.
Preparation
- Combine eggs, butter and sugar in a bolw and whick together,
- Add in the flour, baking powder, cinnamon and mix everything together with your hands until the dough comes together,
- Finally incorporate in the walnuts, figs, raisins and apricots,
- Form the dough into a rectangular log on a greased baking sheet, and brush milk on top,
- Bake at 190 degrees celsius preheated oven until golden,
- Remove from the oven and using a serrated knife, slice the log on a sharp diagonal into about 3/4 inch thick slices,
- Arrange the slices on the baking sheet, cut side down,
- Bake at 170 degrees celsius for another 15-20 mins.
