Diet Chicken Karniyarik Recipe
Serving : 2 Servings
Ingredients
- 2 eggplants,
- 1/2 chicken breast,
- 1 onion,
- 2 green peppers,
- 2 cloves of garlic,
- 1 tbsp tomato paste,
- 2 tomatoes, grated,
- 2 tsps ground red pepper,
- 1/2 tsp pepper,
- 1/2 tsp cumin,
- Salt.
Preparation
- Wash and dry eggplants,
- Place a parchement paper on a baking sheet,
- Put eggplants on parchement paper,
- Bake in a 200 C degrees preheated oven until tender,
- Chop chicken breast in tiny pieces,
- Chop onion and green peppers,
- Transfer chicken breast into a non-stick pan,
- Cook until whiten in low heat,
- Add onion and green peppers,
- Cover the lid and cook for 20-25 mins. in low heat,
- Add tomato paste and cook for another 2 mins.
- Add half of the grated tomatoes and cook for 5 mins., remove from heat,
- Stripe peel eggplants,
- Press with a fork and make a large hole in the middle,
- Fill the hole with chicken mixture,
- Transfer the remaining grated tomatoe into a baking dish and sprinkle some salt,
- Place eggplants into dish,
- Bake for 15 mins. in a 200 C degrees oven.
