Diet Chicken Karniyarik Recipe

Serving : 2 Servings

Ingredients

  • 2 eggplants,
  • 1/2 chicken breast,
  • 1 onion,
  • 2 green peppers,
  • 2 cloves of garlic,
  • 1 tbsp tomato paste,
  • 2 tomatoes, grated,
  • 2 tsps ground red pepper,
  • 1/2 tsp pepper,
  • 1/2 tsp cumin,
  • Salt.

Preparation

  1. Wash and dry eggplants,
  2. Place a parchement paper on a baking sheet,
  3. Put eggplants on parchement paper,
  4. Bake in a 200 C degrees preheated oven until tender,
  5. Chop chicken breast in tiny pieces,
  6. Chop onion and green peppers,
  7. Transfer chicken breast into a non-stick pan,
  8. Cook until whiten in low heat,
  9. Add onion and green peppers,
  10. Cover the lid and cook for 20-25 mins. in low heat,
  11. Add tomato paste and cook for another 2 mins.
  12. Add half of the grated tomatoes and cook for 5 mins., remove from heat,
  13. Stripe peel eggplants,
  14. Press with a fork and make a large hole in the middle,
  15. Fill the hole with chicken mixture,
  16. Transfer the remaining grated tomatoe into a baking dish and sprinkle some salt,
  17. Place eggplants into dish,
  18. Bake for 15 mins. in a 200 C degrees oven.
