Banana bread is one of the most famous recipes of American cuisine. As we call these kinds of pastries as cake in Turkish, I found it weird to call them bread but I’m getting used to it. The main difference of banana bread and similar American breads/bundt cakes from Turkish style bundt cakes is that they are made with butter and do not contain milk. We generally make them with oil and milk. Another one is that they are usually made with baking soda, but I prepared this recipe especially with baking powder. I will explain why.
Baking soda gives recipes a different flavor and sometimes a bitterness if the baking soda is not activated enough. Most of the people are afraid to get that bitterness and some of the people doesn’t like the flavor that baking soda gives to the recipes, so I decided to skip baking soda and use baking powder instead.
The Importance of Flour Amount in Pastry Recipes
The amount of flour added to pastries can always vary depending on the ingredients used. I have written this at every opportunity at the expense of boring the people who reads everything I write, then I thought not everyone has to read every article I write and I started to mention it in every recipe. But I still get comments such as I APPLIED THE RECIPE AS IT IS BUT, it was liquid / dry.
While cooking, applying the recipe exactly the same way does not give the right to say “it’s not my fault”. Everything is because of the person who does it, whether it is good or bad. There are many variables in the kitchen and it is necessary to take the initiative and act according to these variables. The same goes for this recipe. In the recipe, according to my own experiences, I wrote the flour amount that gives the best consistency in my conditions, but this amount may change according to your conditions. Therefore, it is your responsibility to determine the amount of flour according to your own conditions and the consistency of the dough.
It’s also same with the sugar amount. You should taste what you are doing and arrange the sugar amount as you like.

- 2 eggs,
- 2 bananas,
- 150 g of melted butter,
- 3/4 cup sugar,
- 2 cups of flour + 1 tablespoon of flour,
- 10 g of baking powder.
- In a deep bowl, mash bananas,
- Add the eggs and sugar and beat,
- Add the butter and beat,
- Add the flour little by little and keep beating,
- After half of the flour, add the baking powder together with the flour and beat it,
- Add the remaining flour and beat,
- Pour the mixture into a greased 24 cm baton cake mold and bake in a 180 C degrees preheated oven until it is browned and the toothpick test is clean.
