Avocado Red Bean Salad Recipe

Serving : 2-4 Servings

Ingredients

  • 200 g canned red beans,
  • 1 avocado,
  • 1 small onion,
  • 3 roasted red peppers,
  • 1 cucumber,
  • 1/2 cup crushed walnuts,
  • 1 handful of chopped dill,
  • 1 handful of chopped fresh mint,
  • 1 tsp red pepper flakes,
  • Olive oil,
  • Salt,
  • Lemon juice.

Preparation

  1. Peel the avocado and onion and chop,
  2. Chop roasted peppers and cucumber,
  3. Combine all the ingredients into a bowl,
  4. Sprinkle with salt, drizzle olive oil and lemon juice and mix well.
