Aji Sauce Recipe
It is possible to see many different aji sauces in South American cuisine. Aji means pepper in Latin American Spanish. Since pepper is a vegetable that grows and is widely used in Latin America, there are different pepper sauces in different cuisines. Today we will talk about the aji sauce of Colombian cuisine.
The basis of aji sauce consists of plenty of coriander, white onion, hot peppers and a small amount of tomato. The sauce contains vinegar, lemon juice, salt and water. No oil is used in aji sauce. All ingredients are chopped as small as possible. Sometimes it is prepared with a food processor. It can be said that aji is similar to our acılı ezme.
The white part of the spring onion is generally used in aji. Otherwise, white onion also serves the same function. Tomatoes need to be de-seeded and chopped into small pieces so that they do not dominate the sauce. The dominant flavor in the sauce is coriander. If you don't like coriander, you can use parsley instead. For pepper you can use jalapeño, habanero or Mexican peppers.
You can serve aji with fried foods such as empanadas or grilled meats.
You can store aji in a lidded jar in the refrigerator for up to a week.

Ingredients
- 2 handfuls of fresh coriander leaves,
- 1/4 white onion,
- 1 green or red hot pepper,
- 1/2 tomato,
- Juice of 1/2 lemon,
- 3 tablespoons of vinegar,
