Acma Pastry With Olive Paste


  • 6 cups flour,
  • 1 cup warm milk,
  • 1 cup warm water,
  • 1/2 cup vegetable oil,
  • 42 gr. fresh yeast,
  • 2 tablespoons sugar,
  • 1/2 tablespoon salt,
  • 100 gr. butter at room temperature,
  • 1 cup olive paste,
  • 1 egg yolk for top.


  1. Mix together the flour, sugar and salt in a large bowl,
  2. Form a cavity in the centre,
  3. Add the water, milk, vegetable oil and yeast slowly and mix with your hands to form a soft  dough,
  4. Knead the dough well for 2 mins and form a smooth ball,
  5. Cover the dough and let it rest somewhere warm for 1 hour,
  6. Pull clementine-size pieces out of the dough,
  7. Dip your hands into vegetable oil to prevent the dough from sticking,
  8. Place 1 tsp of butter and 1 tsps olive paste in the centre of each piece and mold the dough around it to form smooth balls,
  9. Place each ball on the kitchen counter and press with your hands to roll it out to the size of a small dessert plate,
  10. Roll the dough from one side to form a tube,
  11. Pinch the two sides of the tube together to seal and place on a baking sheet lined with parchment paper,
  12. Cover and let rest for 20-25 mins,
  13. Brush with egg yolk beaten with some vegetable oil,
  14. Bake in an oven pre-heated to 200 degrees Celsius until golden brown.
