Green Lentil Soup With Orzo
Serving : 4-6 Servings
Ingredients
- 1 cup green lentils, washed and drained,
- 1/2 cup orzo,
- 1 onion, chopped,
- 2 green peppers, chopped,
- 1 tbsp tomato paste,
- 1 tomato, diced,
- 2 tsps ground red pepper,
- 4 tbsps vegetable oil,
- 5 cups water, at room temperature,
- Salt to taste.
Preparation
- Heat vegetable oil in a pan,
- Add onions and fry well,
- Add green peppers and fry,
- Add tomato paste and keep frying, constantly stirring,
- Add ground pepper and stir,
- Add tomatoes and fry,
- Add green lentils and stir,
- Add water and cook 10 mins. after it starts to boil,
- Add orzo and cook until both lentils and orzo are tender,
- Add salt and remove from heat.
