Leek Cake (Luçenik) Recipe

Leek Cake (originally "Luçenik") is one of the traditional flavors of Thrace. It may be called by different names in different places. But basically and most understandably, leek cornmeal cake. The region where leeks are consumed the most in Turkey is probably the Thrace region. For example, I was very surprised when I came to Ankara and saw that people were so unfamiliar with leek foods. Meeting people who have never eaten leek pie in their life was seriously one of the weirdest things that could happen to me, and I've experienced it quite often.

There is a story my father told about leeks. I don't know how much is right or how much is wrong, but it's pretty fun. One day, an Albanian went to sit with his friend. At that time, the family he went to was eating at the table. They also invited this to come and eat. No, he said, I can't eat very full. Come and look, they said there is chicken, eat it, he said no, I don't want it. They said come and eat rice, he said you eat, I'm full. Come and taste the baklava, they said. He said, "No, I'm too full, I can't even eat leeks if you have any." You see, Albanians love leeks. In this case, the geographical proximity of the Thracians does not deny itself.

If we go back to our cake... It is a delicious cake with plenty of leaven, slightly moist texture. It is no different from normal cakes in terms of production stages. Therefore, there is nothing to force you while doing it.

Let me answer the questions in your mind right away; Can we add cheese too? Yes, but be careful not to exaggerate the amount, it already has plenty of ingredients. If a little more wet material enters, it may be difficult to cook, and the probability of remaining raw increases. Can it be made in a cake heart? It is traditionally cooked this way on a flat tray. But you know, of course. What can I use besides leeks? If you want to make luçenik, you should use leeks. Leek Cake (Luçenik) Recipe with Video

Serving : 8-10 Servings

Ingredients

  • 3 eggs,
  • 1 cup yogurt,
  • 1/2 cup vegetable oil,
  • 3 tbsps flour,
  • 1 cup cornmeal,
  • 10 g baking powder,
  • 2 tsps salt,
  • 5 stalks of leek, chopped,
  • 3 tbsp vegetable oil.

Preparation

  1. Heat 3 tbsps of oil in a large pan,
  2. Add leeks and cook until tender,
  3. Beat eggs,
  4. Add yogurt and vegetable oil and keep beating,
  5. Add flour, cornmeal, baking powder and salt and mix well,
  6. Add leeks and combine,
  7. Grease a 24 cm baking dish and pour the batter,
  8. Bake in a 180 C degrees pre-heated oven until golden.
