Carrot Cake

Ingredients:

  • 3 eggs,
  • 3/4 cup granulated sugar,
  • 1/3 cup vegetable oil,
  • 1 cup whole milk,
  • 2,5 cups flour,
  • 25 gr. baking powder,
  • 1 teaspoon cinnamon,
  • 2 carrots,
  • 1 cup coarsely ground walnuts.

Preparation:

  1. Cream together the eggs and sugar until white and frothy,
  2. Whisk in the vegetable oil and milk
  3. In a separate bowl stir together the flour, baking powder and cinnamon,
  4. Add the dry ingredients into the wet mixture slowly while whisking,
  5. Finally fold in the grated carrots and walnuts,
  6. Pour the batter into a greased springform pan,
  7. Bake at 200 degrees celsius preheated oven until the top is golden.
