Celery Root Casserole With Bulgur Recipe Celery Root Casserole With Bulgur Recipe

Ingredients:

  • 4 medium sized celery roots (800 g), chopped,
  • 1 onion, chopped,
  • 1 red pepper, chopped,
  • 1/2 cup thick bulgur, washed and drained,
  • 1 tablespoon tomato paste,
  • 1 tsp sweet chili powder,
  • 2-3 cups of water,
  • 3-4 tablespoons vegetable oil,
  • Salt to taste.

Preparation:

  1. Heat oil in a large pan and add into the onions,
  2. Sautee until tender,
  3. Add tomato paste and saute a few mins. more,
  4. Add into sweet chilli and stir,
  5. Add chopped celery and stir well,
  6. Cover the lid and cook in low heat until almost tender,
  7. Add into the red pepper and cook a few mins.,
  8. Add into the bulgur and water,
  9. Stir well and cover the lid,
  10. Cook in low heat until the bulgur is tender,
  11. Add salt, stir and remove from heat.
